What are the most exciting developments from non-Europe and/or non-Northern-Hemisphere?

My vague sense of "macrohistory of the world" is fairly Euro-centric, and Northern Hemisphere Centric. And I'm not sure how much of that is to with "well, for good or for ill Europe kinda took over the world and everything is entangled with that" and how much of it is "I grew up in a European-descended country which wrote European-descended history books".

At some point I'd be interested in figuring out how to build a proper sense of how history all fits together, but for now, just wanna get bombarded with cool stuff.

What are the most important bits of history, inventions, and developments from non-Europe and non-Northern history? Ideally, stuff that ended up playing a longterm role in humanity's capabilities, but random stuff like "The Incas independently invented writing" would be good too.
