What I have found to be the best textbooks for economic theory, and econometrics based on my experiences at econ grad school (graduate level, so more mathematical than suggestions above)

Microeconomic theory  - individual decision making/production/general equilibrium - Kreps, Microeconomic Foundations 1: Choice and Competitive Markets. Better then Mas-Collel, Whinston and Green, Microeconomic Theory, and Varian, Microeconomic Analysis

Microeconomic theory - game theory - Osborne and Rubenstein, A Course in Game Theory. Better than Mas-Collel, Whinston and Green, Microeconomic Theory, and Tadelis, Game Theory: An Introduction.

Macroeconomic Theory - growth theory - Acemoglu, An Introduction to Economic Growth

Macroeconomic Theory - business cycles - Lundqvist and Sargent, Recursive Macroeconomic Theory

General econometrics: Cameron and Trivedi, Microeconometrics: Methods and Applications

Microeconometrics/causal inference: Angrist and Pishke, Mostly Harmless Econometrics, and also Cunningham, Causal Inference: the Mixtape

Bayesian Econometrics: Greenburg, Introduction to Bayesian Econometrics
