You can donate your brain to a brain bank, where it will be preserved for long time and studied. This combines benefits of donation and cryonics.

I understood that they cut off tissue for research, unless you know one where they don't. I also couldn't find a source for how long they preserve brains. But if there is one that keeps your brain intact (As much intact as an oxygen-deprived transported brain can be) and they preserve it for a long time, then that does sound like a reasonable option for people living within donating distance to it.

Let's say you're afflicted by a severe illness and have, say, 5 % odds of surviving. If you end up dying of it, all of your organs will be damaged beyond repair. However, as of now they're still fine and safe for organ donation. How do you feel about cutting to the chase and committing suicide right here and now so you can produce a fresh dead body with superior utilitarian value?

Very sad. I'm not saying people have the strength to do these things, I'm just saying they are (from a utilitarian perspective) irrational.
